Why would Bookman care about the evolution of the Innocence? I think it's probably simply because it's something interesting to record. If you mean why he cares about Lavi leveling up, it would make Lavi too close to the Innocence/the side of the Order to be impartial - they're already teetering on the line with that anyway masquerading as Exorcists.
